1. Cured meat platter: sopressata, cappicola, fennel salami, peppered salami; marinated mushrooms, artichoke hearts, and pepperoncini.
2. Mushrooms in puff pastry: Use button or cimini mushrooms, remove stems, fill with borsin herb and garlic cheese, wrap in puff pastry and brush with egg wash. Bake until puffed and golden.
3. Sliced baguette topped with gorgonzola cheese and drizzled with honey, broil until crisp and cheese is slightly melted.
4. Salami rollups: take slices of peppered or dried salami, spread with cream cheese, wrap around a cornichon and secure with toothpicks.
5. Baked Brie En Croute: take a large wheel of brie and top with caramel ice cream sauce and chopped pecans. Enfold with a large square of puff pastry and secure with bakers twine. Brush with egg wash and bake until puffed and golden. Serve with artisan crackers. You can also substitute green or black olive tapenade for the sauce and pecans.
6. Lil smokies in crescent roll dough: Cut Pillsbury crescent roll dough into 4ths and wrap around smokie. Brush with egg wash and bake until golden. Serve with barbecue or teriyaki sauce.
7. Green olives in puff pastry: take large martini olives (Queen's) and drain thoroughly. Wrap in puff pastry and bake until golden and puffed.
8. Baked ham, sliced thin and served in mini orange muffins with softened cream cheese and marmalade.
9. Teriyaki chicken wings
10. Asparagas wrapped with peppered bacon and broiled until done.

BAKED CRAB RANGOON
for a classy seafood dish
Oven: 350
18—20 Minutes
1 can crabmeat, drained, flaked
4 oz pkg cream cheese, softened
1/4 c thinly sliced green onions
1/4 c light mayonnaise
12 won ton wrappers
Preheat oven. Mix crabmeat, cream cheese, onions and mayo. Spray 12 medium muffin cups with cooking spray. Gently place 1 won ton wrapper in each cup, allowing edges of wrappers to extend above sides of cups. Fill evenly with crabmeat mixture. Bake until edges are golden brown and filling is heated through. Serve warm. Garnish with chopped green onions, if desired. Note: For Mini Crab Rangoon use 24 won ton wrappers. Gently place 1 won ton wrapper in each of 24 miniature muffin cups sprayed with cooking spray. Fill evenly with crabmeat mixture and bake as directed. Makes 12 servings, two appetizers each.
Very easy dish.For optimum taste don't be stingy when getting crabmeat and serve on a warming tray to keep these babies warm. They are edible when cool but warm would be better.

baked brie~
INGREDIENTS
2 tablespoons butter
1 teaspoon crushed garlic
2 tablespoons slivered almonds
1 (8 ounce) can sliced mushrooms, drained
1 tablespoon brandy
1 teaspoon dried tarragon
1 (8 ounce) wedge Brie cheese, coating removed
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Melt the butter in a medium saucepan over medium heat. Mix in garlic and almonds, heating until almonds are lightly browned. Stir in mushrooms and cook until tender, about 5 minutes. Cover with brandy and sprinkle with tarragon.
Place Brie in a small baking dish. Pour the mushroom and brandy mixture over Brie. Bake in the preheated oven 20 minutes, or until bubbly.

ASPARAGUS WRAPPED IN PROSCIUTTO
2 lbs. fresh asparagus
marscapone cheese
1/4 lb. prosciutto ham, thinly sliced
Snap off tough ends of the asparagus. Boil spears for 4 minutes in salted water; drain and place in a bowl of ice water, to stop cooking. Cut prosciutto in half the short way, so that you end up with a stack of approximately 5-inch long slices. Spread marscapone cheese on a slice of prosciutto, and place 3 spears of asparagus on one end and roll up. Repeat with remaining ingredients. Place the rolls about 3—4 inches under the broiler for about 2 minutes, until prosciutto crisps and asparagus tips brown slightly. Number of servings depends on number and thickness of the asparagus spears.
MUSHROOM APPETIZERS
4 ounces fresh mushrooms, finely chopped
1/4 cup butter or margarine, softened, divided
1 jar (5 ounces) sharp American cheese spread
1-1/2 teaspoons mayonnaise
1/2 teaspoon seasoned salt
1/2 teaspoon Italian seasoning
1/4 teaspoon garlic salt
6 English muffins, split
In a small skillet, saute mushrooms in 1 tablespoon butter; drain and cool. In a bowl, combine the cheese spread, mayonnaise, seasoned salt, Italian seasoning, garlic salt, mushroom mixture and remaining butter. Spread onto cut side of each muffin; cut each into eight wedges. Place on a baking sheet. Broil 4 in. from the heat for 4 minutes or until golden brown. Refrigerate any leftovers. Makes 4 dozen. I love pigs in a blanket. Make some pastry dough roll it out . Drop a few pieces of sausage on with cheese and cut into small squares and roll up. Or you can add a long sausage and the cheese. Roll up into a long thing like a stick wrapped in a sheet. Then you cut into small pieces. Bake for like 15 mins and ur good to go.
