Oahu (Honolulu): climb Diamond Head, take a catamaran ride off Waikiki, Arizona Memorial.
Maui: 'Iao Needle, Haleakala at sunrise, Wailea Beach, Maui Ocean Center.
Big Island: Volcanoes National Park, Painted Church, Place of Refuge.

I'll tell you about Maui, since I live on this island. Atlantis Submarine in Lahaina-can see fish w/o getting wet. You can even see a sunken ship. The Lahaina Cruise Company has whale watching boats that go out of Lahaina harbour. Also, they can book a romantic sunset dinner cruise. Veggie dish you can eat on that boat is Couscous.**Best attraction for you would be the Ulalena Show- live theatrical show about Maui's history and culture. Acrobats train w/Cirque de Soleil.
Of course, you will have to go to a luau on your trip if you have never been to one. I would recommend the Feast at Lele- you have your own server, more intimate because you sit w/only your party and it isn't a very large luau. The show is fantastic and food is the best. They cater from I'O restaurant which is the one of the best restaurants on the island. Many vegetarians don't go to luau because they feel there are no veggie dishes. This luau has some dishes w/meat, but many w/o.
Now, for cheap veggie restaurants: Thai Chef in Old Lahaina Center. Bale's French & Vietnamese Cuisine at Lahaina Cannery Mall's Food Court.

Go to Mauna Kea on the Big Island!!! It rocked! If you want a great view it is the best. On Oahu don't miss North Shore, The Polynesian Cultural Center, and Pearl Harbor. Waikiki is cool if you are into shopping and clubbing. There is a beautiful Buddhist temple at Valley of the Temple on the Kaneohe side and I believe the bus goes to all those attractions.

I live on the Big Island. There is a great farmers market right in Kailua Kona. Are you staying in a condo? If so, you can make some of your own meals. Some of the Thai restaurants have vegetarian food too. The Volcanoes National Park has some great hiking trails (short and long hikes) and spectacular scenery.
