Yes they are amazing because the PS3 naturally has good graphics, it beats the 360 except for 720 resolution against 360s 1080p . Yeah Sad isn't it lol.
Component cables will still have one of the best qualities.

S-Video
Component
HDMI
DVI
You should never use S-Video because PS3 comes with Components lol./

Yes, graphics will be very good as component cables carry a 1080i signal... the PS3 is capable of broadcasting a 1080p signal... but I would be surprised if your tv supported it.

Component is not as good as HDMI 1.3a cable, but it's good. Component supports up to 1080i, whereas HDMI supports up to 1080p. They both support 720p. Unfortunately, you must buy them separately. Only composite cables come with PS3.

The graphics are good on a PS3 no matter what.
I upgraded to an HDMI cable, just for the hell of it.

yes the component cable is still an HD cable, just make sure that your TV has component inputs.

yes it does.... as long as your tv is working at its full display capacity... because most games on the ps3 dont take advantage yet of playing in 1080p... most of them only go up to 1080i
