Just like the PS1, PS2 games will eventually stop being developed. You will start to notice that ever A-list Sony exclusive will be going to the PS3. It may be a while before they stop developing games, but in reality it will probably be 2 years before you see mostly crap go to the PS2 platform. It may be different for the PS2, but previous generations of consoles have focused mainly on the new platform.
The only reason PS3 games would be released after the xbox 360 is if they were programmed for the PC/xbox and ported to the PS3. It is more difficult to program for the PS3, but when done correctly you get better graphics and smoother games.

It is true that sooner or later they will not make anymore PS2 games since PS3 is out but right now game developers will continue to make games for the PS2 since there is still a large market for that system. Sony has already planned to revise the PS2 the second time to make the system even small/thinner. As it seems that it is difficult for them to make PS3 games. If you can notice PS3 games always comes out last compared to the other console - xbox360/Wii.

I think Sony's already pretty much stopped. I'd bet on EA continuing to release their sports franchises on PS2 until 2010 or 2011, much like what they did with the PS1.
