I'm about to make some sauerkraut - what does one or the other of those seasonings do to it?

I just made a chacroute (Emeril's recipe in combination with a very old family one from Germany) and both called for caraway seeds. Well, in this case, the caraway was toasted and it adds a mild nutty flavor to the kraut.

must be Caraway... that is why a Reuben is so good... kraut, corned beef on rye bread (which has caraway seed in it) I can't say I've ever heard of making kraut w/ the seeds in it, though.

ETS: Fennel seeds are what give Italian Sausage it's unique licorice flavor.

Caraway Seeds, the same things that stud the interior of a lot of rye breads are what you're looking for......Enjoy your kraut, and have a good holiday......
