The test would have to be carefully conducted to make sure that none of the altars contained hidden incendiary devices. There would have to be some way to make sure that no one used anything like lasers or other devices to secretly light their altar.
You might want to do a dress rehearsal first, just to make sure that the god of your religion will actually come through. It would be a bit embarrassing if you set it all up and got zilch.
Personally, I've always suspected that the twelve barrels of "water" that Elijah poured on his altar were actually some sort of lighter fluid. Two of the barrels may have also been some sort of chemicals that reacted and caused the altar to ignite.
A lot of Christians will say that it shouldn't be done because it would be "testing" God. It sure is convenient that the religion has a belief that one should not "test God". It makes it a lot easier to avoid having to explain why God was failing all the tests everyone did.
A prohibition against "testing" a god is a sign that the religion is false.

No, back then God answered freely. Now he does not interact with people directly. He relies on the faith of people. You know seeing is believeing? Well, if you don't see it takes strong faith to believe therefore, a better evaluation and show of faith. Does that make sense?

Bad because it won't answer any questions about god. For example lets say fire comes down and lights one altar. So it lit one alter on fire - still doesn't prove god did it. There may be some other explanation for it. No point in jumping to conclusions. On the other hand lets say it doesn't light any alter - there is no fire coming down. Religious zealots will simply say you can't put god to the test, or god wasn't answering for some reason or other that day... on and on... they will never admit there is no god no matter what test you put out there.
See why its a bad idea now?
