MUSHROOMS ALFREDO
1 pkg. Gourmet Stuffing mushrooms
3 or 4 green onions
2 tbsp. butter
1 pkg. Knorr Alfredo mix
1 lb. fresh crab meat or 1/2 lb. imitation crab meat
Remove stems from mushrooms. Discard stems. Prepare Alfredo sauce as directed. Chop green onions and saute in butter. Add crab meat to onion and butter. Preheat oven to 350 degrees. Combine in bowl crab meat mixture and Alfredo sauce. Stuff mushrooms with mixture. Place mushrooms in buttered Pyrex dish. Bake for 45 minutes at 350 degrees. For crispy coating on top, after cooked place in broiler for a few minutes.
If you wish about 5 minutes before done, sprinkle with Parmesan or Romano cheese.

My mother used to make this dessert on special occassions only, you'll see why after viewing the ingredients :o. Still, it's an absolute hit for the Soul Food lover! Yummm :) I couldn't post her special recipe, so I snatched this one from an on-line source, which looks to be very delicious also. Peach Cobbler Ingredients: 1 large can of Delmonte® Sliced Peaches 1 stick of butter or margarine 1 1/2 cups of granulated sugar 1 1/2 teaspoon of vanilla flavor 1 1/2 teaspoon of cinnamon 1/2 cup brown sugar 1 box of Pillsbury® pie crust mix - follow the directions to make the pie crust. Instructions: Mix peaches and other ingredients in a large dutch oven pot, and bring to a boil. Pour ingredients into a large casserole dish. Roll the pie crust into 1 whole sheet to cover the dish, or cut it into strips and place over the peach mixture. Preheat oven to 350 degrees Cook until golden brown approximately 1 hour Best serve with vanilla ice cream.

Roasted root vegetables:
Use whatever vegetables you like cut into bite-sized pieces. (I usually use red potatoes, sweet potatoes, carrots, parsnips, fennel, onion, and whole garlic cloves)
Toss veggies with olive oil, rosemary, salt and pepper. Spread on a baking sheet lined with no-stick foil and bake at 400 degrees, stirring occasionally, until tender (~30-40 minutes or so).
A nice green salad and some good french bread ought to do it.

have never had rack of lamb but I do know, it ain't Christmas dinner unless there is dressing (stuffing). For sure, that gets my vote.

Is dependent on the context really. Which is better as a snack - fruits for me personally. It's tastier and gives you that tad of sweetness. Which can be better as a snack if you are trying hard to minimize back on sugar and lose weight vegetables

You can make up some baked potatos and then have another vegetable as a side, doesn't have to be anything fancy.
