There are two kinds of curves in a road. Horizontal and vertical. Horizontal curves are required for several reasons, i.e. to follow purchased right of ways, to achieve an acceptable grade in mountainous terrain or to route the road around unpassable earth formations.

Vertical curves are parabolic and are used to match the existing terrain while maintaining the necessary sight distance for the design speed of the road.

It's an economy thing. It's to keep from having to back-fill or cut-down land for a road bed. Less dirt work translates into less money needed to complete the road. Sometimes it is to avoid something else altogether - such as wildlife area, historical site, etc.

If it could not bend it would not bend. If it could not bend it would remain straight. It would end up gradually going off into the sky after 4,000 miles or so. If it could not bend it would not wrap around the earth and would not connect back to the point from which you started. A circle and a line are not congruent objects. An object cannot be a circle and a straight line at the same time.
