You obviously didn't read the title of this forum. It's called Law Enforcement & Police. Officers do not give suggestions on how to beat a citation.

In my own jurisdiction and state Reckless Driving is defined as:
Reckless driving.
(a) Any person who drives any vehicle carelessly and heedlessly in willful or wanton disregard for the rights or safety of persons or property, or without due caution and circumspection and at a speed or in a manner so as to endanger or be likely to endanger any person or property, shall be guilty of reckless driving.
It would be my guess that the officer, while watching you in his rearview mirror, either saw you too close or maybe even slipping and sliding on the snow. It's certainly a matter of the officers experience whether or not you were exceeding the limits of safe driving under the conditions existing at the time of the offense.
The officer will testify that whatever you were doing was unsafe for the existing conditions.

You do not have to make excuses, or prove anything. You are innocent until proven guilty.
It is up to the officer to convince the judge you were driving reckless.

You can't really beat a reckless driving citation, because in the eyes of the officer, s/he decided you were driving recklessly for the situation.

When operating a motor vehicle you must be able to control it regardless of the weather conditions. If you cannot you will and should be cited for failure to control or reckless driving.

present persuasive evidence that you didn't drive recklessly, or at least raise reasonable doubt in the eyes of the judge.
the cop will testify, you have the right to cross examine him. you know what he will testify to, you will need to undermine his credibility. If you can do that successfully, you may not need to testify at all yourself - the burden of proof is on them.
Of course if you testify, then you can be cross examined by the prosecutor or the judge can ask you questions too.

Request a hearing. Challenge the police officer on lack of evidence...no photos, no witnesses, he was watching in reverse so he was confused by what he saw.
