While Aaron is the first person to hold the title priest after the law, 2nd Peter 2:5 Noah is called a preacher of righteousness, and Melchizedek is called the priest of God in Genesis 14:18, but while that was before the law, he technically would be the first.

The first person to referred to as a priest was Melchizedek the king of Salem (later called Jerusalem). He appears to Abraham in Genesis 14, where Abraham gives him a 10th of everything he had recovered in a recent battle against men who had robbed his home.

Melchizedek is mention again in Psalms 110 and Hebrew 7.

Moses was the first, along with his brother, Aaron, to make God's wishes known to man. After that, God wanted the Levites to be official priests, and the Levites could marry. The Levites were to pass down the priestly duties to only other Levites (descendants), but after a few generations, the Levite priests got lazy and passed down the priestly duties to outsiders (non-Levites) who could not agree with each other and the church became divided and split into different sects.
The original Levites knew first-hand of God. Their descendants did not know God first hand. So their duties as priests had little meaning to them.

The first person called a priest is Shem, the son of Noah when he was called by the title Melchitzedek.
_____

For those on the Aaron bandwagon, Aaron wasn't even the first Jewish/Israelite/Hebrew (whatever term you like) priest. Moses was. Also, Jethro is called the 'priest of Midian' before the Jewish priesthood was established. There were priests in egypt that are mentioned in passing. Melchitzedek is the first person called a priest. And all the thumbs downs (and thumbs up for Aaron) won't change that bit of truth.

According to the Book of Moses, it was Aaron. He was the first priest appointed by God. There were other Holy Men but Aaron was the first priest.
