Nothing in them to spoil, so I'd say about 2-3 days is the max before the graham crax get stale, and that's if they are well-wrapped.

S'mores don't take much effort, and are really best hot. Why make them in advance? The graham crackers are going to get stale and soft from the moisture/oils in the chocolate and marshmallows.
