Decorating a tree and putting lights on it is a pagan tradition, so if your co-worker was really truly celebrated "Christmas", the name of decorations shouldn't really matter to her.
The lights (candles) are used to symbolize the birth of the Sun and the lengthening of days. Evergreen type trees were used because early pagans noticed that in the winter when everything else died, these trees were still alive and green so they thought that the trees had some kind of special power against death. They acted as a symbol of life in the winter when everything else is bleak and lifeless.

Ask your coworker what Christ has to do with Christmas. Only thing that really makes any connection is the name. Other than that, Jesus was born late August / early September... every thing else was ripped off and stolen from Pagan traditions.
If anything, it's the Pagans who should be freaking out over the continuing use of the word Christmas.

I can answer the Christmas tree part!
Coming from an earlier pagan tradition, then being adopted by Christians in Germany....
Prince Albert, who was married to Queen Victoria, brought the tradition of decorating a tree for Christmas to Britain!
Britain being the superpower of the day and being somewhat influential Worldwide....
Took the tradition of the Christmas tree to many parts of the World, including the United States!
So, you have Prince Albert to thank (or curse!) for that!!! .... lol.
Originally a pagan tradition, it certainly has 'nothing' to do with Christianity or anything 'holy' to that religion!!

I'm sure she'd be really upset if they called it a solstice tree or a Mythras tree. You see, Christians have coopted many pagan traditions and made them their own, and the tree and decorating with lights is one of them. As everyone has pointed out, Jesus was NOT born in December. There are varying dates listed even here, but suffice to say it wasn't all that cold when he was born.
