She has insisted that I do not buy her a gift, but I wanted to make her something- whether it be a pillow, brownies or picture frame or something just so she knows that I'm thinking about her. Any suggestions?

I think you have hit upon the exact perfect thing! Something that is hand made shows a thoughtfulness above the store-bought present. A sweet pillow, brownies or a picture frame that you have made will be dear to her heart!

You could make her brownies or cookies, people tend to like food. If you just want her to know your thinking about her, send over an MMS or E-Card.

If you decide to buy something I'd look at getting a bottle of wine... That's what I get everyone whom I don't know exactly what they would like. Trader Joe has "Two buck chuck", won a bunch of awards with taste tests against bottles that cost hundreds. So it'll be cheap and fairly good, just rip off the label and print a custom one, people think it's expensive all of a sudden since "it has a custom label" (that I printed myself).
