First off, I have to give you kudos for asking for help. Seriously, recognizing that it's been a while since your baby days and that things have changed is HUGE! So pat yourself on the back, Grandma.
Anyway- your questions:
not sleeping through the night is normal for any 9 month old, nevermind one who's just experienced a huge transition.
White bread is bad for anyone. Here's some info on infant feeding:

The other stuff you mentioned is fine but no egg whites yet.
Also, tofu and beans are great. Plus avacado- full of good stuff and it's mushy.

Hi there...you are your granddaughters hero even if she cannot tell you this! I am sure that once she settles she will be so much happier with you than with a random family....no matter how nice the family was. You are her connection to her mother and that is very important.
To answer your questions my daughter is 5 months old and sleeps 10 hours now. My son was 3 mos and slept 8-9 hours. So at 9 months 10-12 is right on.....I don't think that bread of any kind is a good idea until after they have a good grasp on food....maybe around a year. Bread can get all mushy and thick and choke a baby so easily. Whole grain will be better then though.....I did not do eggs till 12 months as well. Bananas and cheerios should be ok soon. question one...
sleep habits between infants that age varie it can be from 6 to 12 hours some sleep longer than others.
question 2...
whole grain as in baby cereal or like whole gran cheerios or i give my baby whole grain oatmeal once in a while i just mix formula in to substitue for the milk.
question 3...
cheerios are an excellent snack for babys just make sure you only give a few at a time i would just put her in her hi chair and spread a few across the tray. but watch her while shes eating at all times.. same goes with bananas and once in a while eggs.. i would hold off on the cottage cheese because it has cows milk in it and babys shouldnt have cows milk until they are over twelve months

My son is nearly 8 months now, he can eat bread as long as it is in small pieces, I cut everything up small and he mashes it with his gums. I would try and get a feel for what she is able to do regarding chewing. You can do jar foods, like the bananas and veggies and stuff like that. I give my son cream of wheat with no milk in it, he eats eggs to I mash them up with the fork. So at 9 months I am sure she can do all this to. I am not sure about cottage cheese as I have not tried it yet nor have we tried cheerios at this point but eggs are good, bread, bananas, apple sauce, jar foods, oatmeal and bananas baby cereal.

My granddaughter is 9 months also. Her pediatrician said NOT to give her eggs as they are a high allergy food. My grandson ate them and had no problems. Sara still does not sleep through the night tho. She still wakes around 3 wanting a bottle but the doc said not to give her one. Weird!
All my grandbabies got bread and finger foods at about 9 months, so just use your best judgement. Also, the pediatrician said that some babies don't like baby food and go straight to table food. Sara is like that. I'm the only one who can get her to eat baby food. LOL. Just make sure the food you give her isn't highly seasoned and soft enough that she can mash it with her tongue or gums.

yeah they do sleep more when they are young umm probably like 10 hours you can give her bread I would give it a lite toast so it drys it a little and it will not gum up umm gosh I have a 2 year old and don't relay remember what exactly I gave at that exact age bananas probably mushed eggs yeah as long as they are scrambled in small pieces I wouldn't go to cottage cheese they aren't supposed to have milk until after a year sooo...hope I helped a little!

My daughter when she was 9 months slept at least 12 hours a night and/or had two naps during the day instead of just one. I don't think I gave her bread until she was at least a year and I did all of #3. I have that book too, and it helped me too. You're a fabulous grandma!!!! Congrats!

1) Generally, kids will sleep as much as they need to. Don't wake 'em unless you have to.
2) By whole grain, I assume they mean stay away from bleached flours, both to minimize chemicals as well as give the digestive tract something to work with

I have a 10month old son who sleeps approx 11-12 hrs sleep through the night. I have not fed him any bread i feed him milk arrowoot biscuits/soft biscuits, soft fruit, custard, babies youghurt, pureed meat and vegies for dinner, babies cereal/ he likes to suck on toast seen as he is teething, weetbix with boiled water, ice blocks etc

No eggs the first yr. Feeding is progressive at that stage. You could start at square one and move gradually. (Ensuring she's getting enoughWHOLE milk - needs the fat for brain development) Start with rice cereal, then if she tolerates that you move to other grains then ungassy veggies, then fruit, then combos then gassy veggies, then meat. No fish, eggs or peanuts the first year.
