Can someone point me in the right direction as to the best layout for this?

So you don't have everyone bringing sides with no main course or desserts, try to have categories with blanks for names. i.e.

Meat/main dishes (4)
__________________
__(names go here) __
__________________
__________________

Vegetable/potatoe sides (5)
_________________
_________________
_________________
_________________
_________________

Does that make sense? Just categories with as many blanks for the number of dishes that you want.

Go ahead and start with a blank document. Create a table with one column and 20 rows. (Any more rows, and the lines will be unpleasantly small to sign) In the top row in a pretty font, type "Christmas party pot luck sign up" and then import some fun clipart, or print it out and add stickers. If you have more than 20 people, print it on both sides and then print as many pages as you need. Attach to a clipboard with a pen tied to it and you're there.

You don't need to have people write what they are bringing, because it's pot luck. If you don't want pot luck, then assign dishes to people but don't call it pot luck or people will think you're dumb. In my experience (I'm 48) you get your food groups all filled, and if there are 3 lasagnas, then that means everyone will get to try some lasagna today. Because everyone is bringing their favorite dish, you are guaranteed that everyone will like at least one thing.
