Animals eat, sleep mate and defend, as do human beings. But we have the intelligence to question our existence and our relationship to the creator. They don't. If we misuse our human form of life and not make any progress towards our eternal position and relationship to God, we will in our next life take birth as an animal or lower species of life. Why? because the human form is meant for self Realization and we misuse that God will give us a suitable body so we don't get karma. Animals aren't responsible for their actions as humans are. We get karma. (reactions to our actions) For info on this topic read The science of Self Realization by Bhaktivedant Prabhupada

Which apes ?
Most are 99.99999999 % close to us DNA wise. Only one genenetic code away from us humans.
But the one thing that distinguishes us from them is the abilities to speak a spoken and write a written language.
