I used to always say Merry Christmas to people before that whole political-correctness thing came about. Afterwards, I didn't really say much at all; "Merry Christmas" has now become socially unacceptable, and "Happy Holidays"... well... I just don't like the vibes it gives off. Sorry, but that's just me.
And personally, I don't think people should really be offended by holidays they don't celebrate. I've had people say Happy Hanukkah to me, and I don't go around making a big fuss because I don't celebrate Hanukkah myself! No, I usually return the greeting. People these days are just too sensitive.
And whatever you do, DON'T say "Happy ChristmaHanuKwanzika" around me. Bleh!

Merry Christmas. If I know the person is jewish I'll say Happy Hannakuh. Otherwise I say Merry Christmas.
