From the International Movie Data Base web site (IMDB.com), "According to Peter Fonda, four police bikes were customized for the film. One was burned during filming, and the other three were stolen before filming was completed."
Before the release of the film, someone or some group stole three of the four bikes used in the film. They only left the Captain America used for the explosion scene. The bikes never turned up, probably receiving a thorough strip job and sold for parts. The only original remained in Dan Haggerty's possession until 1996 when it sold on auction. It now sits in the Alamo Car Museum in New Braunfels, Texas. They had planned to use the bikes for publicity purposes and then keep them as mementos of the film.

Peter Fonda was an experienced motorcycle rider and the bike he rides in the movie is seriously stretched and raked and has tall "apehanger" style handlebars. Dennis Hopper was not as experienced a rider, therefore his bike is less radically chopped.
Peter Fonda wore the Capt. America jacket and rode his chopper a week around L.A. before shooting began to give them a broken-in look and to get used to riding the radically designed bike. The American flag on the back of the jacket and on the gas tank of the bike caused him to be pulled over several times by the police.

Fonda got the idea of sewing an American flag on the back of his jacket from the jacket Wayne wore in Flying Tigers (1942)
The rednecks in the Louisiana coffee shop who taunt the boys, and the two in the pickup truck at the end of the movie, were all local residents recruited by the filmmakers. In the case of the coffee shop denizens, the filmmakers were preparing to audition a group of local theater people when Dennis Hopper saw Causey, Lafont, et al, watching them and making wisecracks and decided to use them instead.
'Peter Fonda' 's character is only referred to by his real name one time in the entire movie. Billy (Dennis Hopper) does not refer to Captain America as "Wyatt" until the final campfire scene toward the end of the film.
Captain America's (Peter Fonda's) chopper was so "squirrely" to ride that at one stage Jack Nicholson (who was on the back) squeezed his knees on Peter Fonda's side to balance himself and broke one of Fonda's ribs.

That my dear lady was a custom built frame called hardtail by Harley riders because there is no suspension on the back tire. The engine was from an original Harley and it is called a panhead due to the shape of the top part of the engine. I believe the engine and wheels are the only parts that were actually Harley. The rest of it was custom parts provided by the builder, Ben Hardy.

Custom chopper.with a V twin engine and not much else from the stock models of the day.A lot of todays stock bikes are sporting that look today to some degree, Check the harley web site and you will see.

Custom bike, I don't think it had rear suspension either which would make it a rigid chopper or "un-sprung" and the front was raked out (lengthened). I saw it on a bike show before. Was it Peter Fonda (I'm to young to remember but I did watch the movie) He said it was a rough unforgiving ride.
