Do you want variety or good fresh seafood?. They don't go together. A good restaurant will get what ever fish shows up at the dock that day.. and the menu should be printed that day. Obviously what shows up a dock in Boston will be completely different than New Orleans. Nothing like fresh seafood. If you want variety then it is one or more days old, or frozen (not necessarily bad) or perhaps both. Some seafood, like Swordfish I actually prefer frozen other wise what you get has been sitting on ice at sea for days. If frozen, it is caught, cleaned on ship and frozen very quickly after catch. Chilean Sea Bass is almost always frozen before shipment. When I go to my fish market, the only consistent available are the farmed raised fish, salmon, tilapia, catfish, shrimp and perhaps muscles. The others all depend on the market and I wouldn't have it any other way.

Try Rocky Cay on San Andres Island. Or try Jaramillos at Parque 93 in Bogota. Landrys is good in Dallas. Pappadeauxs is good in Houston and its in the E term of Houston airport. They have a good lunch buffet. Cheasapeke bay seafood house was good back in the day in MD, and Market Street Grill is good in Salt Lake, although the quality has gone down some in recent years. Norwoods in New Smyrna Beach, Di Nardos in Philly, Gaidos(they have cockroaches on the walls sometimes) in Galveston Jamisosn by the sea in Hawaii.

not sure what is your style of seafood and dont know where you live.
if you live in a city with large chinese or asian community, try a chinese seafood restaurant (not just a regular chinese restaurant), the one with fish tanks in it. they usually serve up good variety of seafood with many ways of preparing the food. you can also try a authentic japanese restaurant.

Depends where you live. If you live in the southeast then Fish City Grill is an excellent choice and not expensive at all.

are you looking for something local (if so where do you live?) or a chain?
Bonefish Grill has pretty good variety and good food for a chain.
