Hi, I read the other day about a book which teaches you how to act and what to say, when someone is belittling you. I believe it had a red cover, does anyone know the name of this book?

I would have thought a simple 'feck off' would do the trick in most cases!

This book does not have a red cover but seems to be on the topic of self-esteem or interpersonal conflict that you are interested in:
Bullies, tyrants, and impossible people : how to beat them without joining them / Ronald M. Shapiro & Mark A. Jankowski, with James Dale (2006)
or is it:
The power of positive confrontation : the skills you need to know to handle conflict at work, home, and in life / Barbara Pachter and Susan Magee.
or possibly:
Don't get scrooged : how to thrive in a world full of obnoxious, incompetent, arrogant, and downright mean-spirited people / Richard Carlson.
I found these titles (none have a red cover) by looking in the library catalog using the subject "interpersonal conflict" or "interpersonal relations." The call number in public libraries will be 158.2
There are many books on the topic of dealing with difficult people. You might take comfort in that fact because it means you are not the only one who has trouble thinking of a good comeback to a bully.

The only "spine" you need cannot be learned from a book. Stick up for yourself, tell these people where to get off. Why are you allowing others to "belittle" you? Will a book put that right? I think not, assert yourself, you already know it is wrong, you do not need a book to tell you so. Stand up and be counted my friend, you are just as worthy!
