Sunk is not a slang term! However, it is not the simple past, which is what the sentence requires:

They sank our ships -- is correct.

Other tenses that are also correct grammatically:

They had sunk our ships before we had time to fire back.

The company has sunk millions of dollars into the project in the past.

"Sunk" is the past participle of "sink." Thus, it requires a helping verb.

You should say, "They sank our ships".

Sunk is either a slang term, or a nautical term indicating that something is not a full deck above the weather deck of a ship. Neither usage is appropriate for this sentence.

Sank is the appropriate past tense version of sink.
