Sounds like the electric fan is not cutting in, start the engine allow it to warm up and with the bonnet open see if the fan starts up.
If it does not first check to see if the electrical wires are still in place and have not been damaged.
If these are OK then the problem is with the temperature sensor fitted to the top of the thermostat housing. Easy cheap thing to replace.

The most likely cause is your cooling fans aren't turning on.
Most likely cause is the fan relay is not working to switch on the fans.
Another possibility is the fan motors themselves are broken.
The reason you car runs fine when your driving is enough air is passing through the radiator to allow the cooling system to do it's job. When you are in stop and go traffic, the cooling fans are necessary to draw air across the radiator to keep the coolant at the proper temperature. It sounds like the cooling fans aren't turning on, which is why you're ending up in the red zone in the temperature gauge.
When the engine gets hot the cooling fans should turn on. Don't let the temperature get into the red, or you'll more than likely blow a head gasket.
Get this fixed immediately. In the mean time, try turning on the heater inside the car and going full blast, may help keep the engine cool enough to drive.
If it gets into the red, stop the car pull over and wait until the temperature drops, or you'll end up paying for a new engine.

You added coolant a week ago.That is when the problem was first noticeable.This needs to be fixed by a mechanic.You have overheated it more than once so don't wait.

brake
If they are in need of topping off something is wrong.

The most likely cause of this is that the cooling fan isn't coming on, and the most likely cause of this is the temperature switch on the radiator is faulty.
Bridge the wiring connector with a piece of wire, and if the fan comes on then you need a new temperature switch, otherwise you need a new fan motor.

try checking the thermostat it might be sticking closed when you are driving the air is being forced thro then when you slow down and stop the air cannot travel thro so it gets hot and hotter
