because on the label it says "Unauthorised copying prohibited" If I was only to make one copy of each ..?

That depends on who you ask. Movies seem to have harsher laws so that even backing up your own is supposed to be illegal. Music its up in the air some organizations say it is some dont.
Its just my opinion but who gives a damn. preserving your vinyl and backing up your own stuff I see no problem with.

You own the album, therefore, you own the right to listen to it in any format you like. I use an iTTUSB turntable by Ion Audio to convert tunes direct from Vinyl to .mp3. Then burn to CD. The included software is called Audacity (available as a free d/l at www.tucows.com), a crippled clone of Adobe Audition but works well enough to clean up clicks and pops on old vinyl.
You do not have the right to further sell any copies you make of the music, but I'd say gifting copies is up to you.

You may copy for your own use, just don't sell the cd's and you will be fine.
