How much would it cost to pay someone to install it? And I'm not finding too many ads in Utah for companies that specialize in hood installation, any suggestions on companies or types of companies that would be able to do this?

check with your AC company . Also check with your restaurant supply businesses in the area.

You are going to need a company that specializes in commercial cooking equipment. Fire code requires an automatic fire extinguisher system above restaurant cooking equipment.

or even a heatiing /cooling place they make ducts,
