Slower truck = 62.5mph
Faster truck = 64.5mph.

The trucks are headed in opposite directions, and after 5 hours, the slower stuck has gone 312.5 miles, while the faster truck has gone 322.5 miles.
312.5 + 322.5 = 635

If the faster truck is only going 2 miles per hour faster than the slower, it could only be 10 miles further after 5 hours no matter what the speed.

Slower truck going 62.5 mph ; faster one 64.5 mph.
Here is a step-by-step method to solve this type of problem :

Call the speed of the slower truck 's', and the faster one (s + 2).
So s + (s + 2) is the distance traveled in one hour
So 5(s + s + 2) is the distance traveled in 5 hours
Then 5(2s + 2) = 635
10s + 10 = 635
10s = 625
s = 62.5 mph -- the speed of the slower truck
and s + 2 = 64.5 mph -- the speed of the faster truck.

Check : 62.5 mph x 5 hours = 312.5 miles
64.5 mph x 5 hours = 322.5 miles
312.5 miles + 322.5 miles = 635.0 miles -- CHECK OK.

Let x = mph speed of faster truck, x-2 = speed of slower truck.

In 5 hours faster truck has gone 5x miles, slower has gone 5(x-2) miles.

5x - 5(x-2) = 635
5x - 5x +10 = 635

Let speed of fast truck br vf, speed of slow truck by vs. Trucks move a distance

xf = vf*t & xs = vs*t in a time t.

Now let d = 635 miles and te = 5 hours. Then

xf - xs = vf*te -vs*te = d

d = (vf-vs)*te

So vf -vs = d/te = 127 mph

But your said that vf-vs = 2 mph and it would be impossible to get 635 miles separation after 5 hours. Better check your problem statement.
