It's different with every person. First let me say i've been buying gifts for my co-workers for 6 years now. Some open them in front of me. and some do what i like to do. I open my gifts on Christmas, i like to stick with tradition.
If you are unsure of what to do. Just ask the person giving the gift. Some will tell you "yeah, sure!" and some will give you that condescending look and say "nooo, you have to wait til' Christmas!"
Also i think if it's in a gift bag you can snoop around :P
Just ask, i doesn't hurt..

It's a gift to the gift giver to open the present in front of them so they can see your appreciation. Some would consider it rude and thoughtless to not open the gift when it is given.

Then look at her reaction. She probably will want to see your reaction to the gift so expect her to say or indicate a yes.
When gifts are given at work the whole Xmas feelings should be taken care of at the time because when Xmas is over and you come back it is to late to share the spirit and excitement that is going on at the moment. Do not douse the spirit if you can help it. When Xmas is over many people just want to move on so if you wait you will loose a little energy of her intended happiness she wants to bring to you.

Most people enjoy seeing the excitement from the person they gave the gift to. Be excited and thanful while opening the gift in front of her.

I think the polite thing to do would be to ask if the giver wants you to open it right then in front of them, or if you should take it home. You could say something like this "Would you like me to open it now, or should I wait until Christmas?" Then if they say they would like you to open it right away, do so. If they say you can do what you like, thank them warmly for the gift and say you would like to save it for Christmas.

I think its rude to open it in front of her. It's too much pressure. I think most people would open theres at home and send a thank you note.
