Let your fiancee know what is going on, this way he will see you did not initiate or encourage the behavior.
If possible, introduce the two people.
If your fiancee has his spine intact and is devoted to you, he will take care of the rest.

avoid any contact with him (emails, calls, texts)
do not accept anything he gives you
do not open the door if he goes to your house
if you really get fed up, threaten to sue him for stalking/harassment
inform you fiance
inform the stalker's family and friends so that they know what he is doing. maybe they can talk some sense into him
