There is a holiday party at my work this week that's a potluck lunch. Any suggestions on what to bring? I'd like something that's easy and I won't have to heat or cook before serving since I'll be at work! Thanks!!

I brought chicken wings to mine last week. Cook ahead of time and keep refrigerated. Quick and easy. Good luck!

Salad- It's fall so here you go... At home, cut and core and aplle into thin slices. Take a bit of cider vinegar and sprinkle it over the apple slices and put them into a zip lock bag for the fridge. ( sounds very weird but it is SOOOO good) Also slice and core some pears and put a little lemon jucie on them and store ina zip lock cold. Then take crumbled blue cheese in a container. Buy a can of smoked almonds or other roasted nuts and chope them into smaller pieces and put them in a little dish and cover them. Then buy a few bags of mixed salad greens. Now- a dressing- get a small box of fresh raspberries. Put them in your blender, add some rice vinegar and a little very litght oil like grapeseed., salt, pepper and one teaspoon of honey and mix it in the blender until its a smooth pink sauce. The next day at work have a big bowl and open all the bags of stuff (except the nuts- some people are allergic so sit them next to the salad with a spoon so they can add their own if they want it.) and put the greens, apples, pears, blue cheese and the raspberry dressing ( not ALL of it, use good judgement on the amount)- toss it all together and leave some big salad tongs in the bowl and sit back and wait for the compliments.

Asian Slaw is always a hit and it's so easy to make.
Asian Slaw:
2 - 1 pound bags of cole slaw or broccoli slaw 1 bunch of green onions (optional)

Dressing:
2 packages of Ramen noodle seasoning
1/3 cup cider vinegar or rice wine vinegar
½ cup sugar (more or less to taste)
½ cup oil

Crunchies:
2 packages Ramen noodles, broken up (Oriental flavor - or 1 oriental, 1 chicken)
4 oz. package of almond slivers
4 oz. package of sunflower seeds (shelled)

Combine salad ingredients and dressing ingredients separately. Toss salad with dressing and crunchies right before serving.

Do not add dressing until just before ready to serve. If taking this dish away from home, transport the dressing and the noodles/seeds/nuts in a separate container.

Cookies are a great item and here's a simple recipe that I use for church. Everyone likes them, they are soft and lemon seem to be the one I make the most! Good Luck!

Cool Whip cookies
1 box any flavor cake mix
1 container cool whip thawed
1 egg

Mix all ingredients and drop by teaspoon into powdered sugar. Bake 350 for 8-10 mins. Makes about 3-4 dozen.
*Note dough will be slightly sticky, if you refrigerate it for 30 minutes before baking it will firm up some.

a huge veggie tray.. everyone always seems to forget the healthy stuff..
loads of carrots, cucumbers, olives, green pepper strips, celery, brocolli & cauliflower sprigs..
and make a wonderful dip out of 2 cups of sour cream and 1 sacket of (any brand) powdered onion soup mix.. mix it together and let it soak up an hour (by the time of your party) and this dip will go so fast.. You can substitue any number of things for the sour cream.. yogurt and mayonnaise combo also (depends what you can find and afford)

christmas tree cheese spread
1 envelope onion recipe soup mix,1 c butter or margarine (softened),2 tbsp milk,2 tbsp preparred mustard,2 c shredded cheddar cheese,2 shredded swiss cheese,2 tbsp pimento (chopped),chopped parsley
In med bowl blend onion soup mix,butter,milk and mustard. stir in cheeses and pimento. spoon onto serving platter,building up the mixture to form the shape of a cone. garnish by pressing parsley and if desired additional chopped pimento onto cone . chill . serve at room temperature. good luck and god bless.

why don't you bring a big salad or a home-made dessert? basically everyone I know would eat a salad as a meal by itself, and a home-made cake or some cookies would be perfect for a holiday party.

A cous cous or pasta salad is usually a good bet - the meditteranean one listed below is lush!

Make sure you check for nut allergies etc jic :)

Pea and Lettuce Salad
1/4 cup sour cream
2 tablespoons mayonnaise
1 tablespoon white wine vinegar
2 cups frozen peas, thawed
2 cups finely sliced romaine lettuce leaves or mixed salad greens
salt and pepper
--In a small bowl, mix sour cream, mayonnaise, and vinegar. In a bowl, mix peas and lettuce. Stir dressing into vegetables and add salt and pepper to taste.

Quick Artichoke Casserole
1 (14 ounce) can artichoke hearts, drained
1 (7 ounce) can pitted black olives, Drained
1 (7 ounce) can button mushrooms, drained
1 cup seasoned bread crumbs
1/4 cup parmesan cheese, grated
1/2 cup olive oil
1/4 cup white vinegar
1/2 teaspoon garlic powder
oregano, to taste
basil, to taste
pepper, to taste
--Preheat oven to 450 degrees.
in a large, ovenproof casserole dish combine all ingredients.
mix well. cover and bake for about 20 minutes. Serve hot or cold with Hot garlic bread, pita wedges or tortilla chips.

Sweet Potato Casserole
2 (16 ounce) cans sweet potatoes
3/4 cup brown sugar
1 teaspoon nutmeg
3 tablespoons cinnamon
1 (8 ounce) bag marshmallows
2 (8 ounce) cans crushed pineapple
6 tablespoons butter
walnuts (optional)
1 teaspoon lemon extract
--Drain potatoes and mash them up and put them into a casserole dish. Put 3 tbs. of butter into the sweet potatoes.Mix and microwave for about 4 minutes. Take out of microwave, mix in 1 tbs. of cinnamon,1/4 cup brown sugar, lemon extract, and nutmeg. Heat again for 1 minute in microwave. Drain pineapples and mix into sweet potatoes. Level sweet potato mixture in the dish. Cover top of the sweet potatoes with marshmallows (uses about 3/4 of the bag) until the top is covered. Heat in microwave for about five minutes or until marshmallows become fluffy. Mix together the remaining 2 tbs. of cinnamon and 1/2 cup of brown sugar until well blended. Sprinkle cinnamon mixture on top of marshmallows until it is all gone. Melt the remaining 3 tbs. of butter and pour over top of the marshmallows. Heat the casserole for only three minutes more. Crush up enough walnuts to cover the top of the casserole. Cover the casserole with tin foil and refrigerate until cool or for 30 minutes.

Veggie trays with dips are always a hit, as well as cold cuts,ham, salami etc...& a variety of cheeses with crackers...have fun!
