That's actually a good question - one of those things that most of us just take for granted! It's biophysics - what's the sturdiest shape that can be built up the easiest and cheapest way, and support a standing structure? A vertical tube offers the best compromise among strength, resilience and ease of construction. Filling that tube in with dead structural tissue makes it that much stronger with an acceptable decrease in flexibility.

The cambium ring is round. When the plant undergoes secondary growth, the secondary xylem and phloem grows from the circular cambium ring. So, its a circle
