When i visit my doctor, i told him i was on diet. He said, if i take bean vermicelli (i.e. glass noodles) instead of rice, rice vermicelli or noodles, my carbohydrate consumption will be lower. Because bean vermicelli gives us protein instead of carbohydrate. How true is that?

If my doctor told me to avoid carbohydrates as an absolute, I would question him/her. (I've had several conversations with health professionals who seem surprised at my knowledge. I guess they're used to dealing with people who literally buy what the food companies think is healthy. Alternately, some of the professionals seem to buy the same stuff too.) Yes, you would likely get more protein from the beans, however one would also get whole grains if whole grain pasta or brown rice is used. I do not avoid whole grains. I do avoid white "grains"-- white rice, white noodles, white bread, etc.
