i've had my parmesan/cheddar cheese become mouldy within days of sealing it in an airtight bag in the refrigerator. how else am i supposed to store it so it can withstand not just a few days, but weeks?

Parmesan cheese is a harder cheese and shouldn't get moldy that quickly. I keep mine in the freezer already shredded in the air tight container. The whole piece would take longer to thaw and then grate or shred, but since it's already ready, parm thaws very quickly (a few minutes). I also keep shredded cheddar in the freezer but it takes longer to thaw. But even my shredded cheddar in the fridge keeps a couple weeks. I keep blocks of cheddar wrapped in plastic wrap and then slice it as I need it. Even if it starts to get some mold, I just cut the mold off first and the rest is fine to eat or cook with.

Are you sure your fridge is cold enough? How quickly does your milk spoil? Your cheese shouldn't be spoiling that quickly.

You know very well, I am sure, that during the maturing process, which can be many months, cheese is not refrigerated, nor is it wrapped in plastic. At home, keep cut pieces of cheese on a wooden board with a cover, to keep flies and dirt off and minimise sweating or drying. Never wrap pieces of cheese in plastic, loosely wrap in waxed or greaseproof paper. Put the board in a cool place. There is no need to refrigerate, which just makes the cheese less flavourful.

Seal it in a bag and put it in the ref, make sure no air can go in and out of the bag, that will prevent molds and the moisture of the cheese to be intact...

I buy cheese at costco. I cut the block into 3 pieces & wrap them in plastic wrap & put 2 of them in the freezer. They have never gone bad. Will.
