I want to make homemade Salted Nut Rolls (like the candy bar) and I want to use vegan marshmallows (gelatin-free). I searched online for a recipe using them but I had no luck. I want to know if anyone has tried making Salted Nut Rolls this way and if so do you have a recipe to share? If not, does anyone know if this would at least taste good?

If you'd actually read my question you'd know that I did try finding it in recipes. I said I didn't have any luck. That's why I'm asking here.

I don't really remember that candy bar, but I found a recipe for it. If the vegan marshmallows have roughly the same consistency as non-vegan marshmallows, I think you could substitiute them just fine. Can you use the sweetened condensed milk? Otherwise, maybe you can figure out a sustitute for that as well.

Good luck. Maybe your's will be even better than the store bought nut rolls!

Salted Nut Roll Bars Recipe

1/2 C Flour
3/4 C Brown Sugar
1/2 C Margarine
1/4 TSP Salt
1 Can Mixed Nuts
6 OZ Butterscotch chips
1@ C White Corn Syrup
2 TBSP Margarine

Crust: Mix Flour, Brown sugar, 1/2 C margarine & salt, pat into a 9x13 pan and bake 10 minutes at 350 Degrees.
Spread 1 can mixed nuts on crust.
Slowly melt Butterscotch chips, corn syrup & 2 TBSP butter. Stir well and pour over nuts. Bake 10 minutes. Cool slightly but cut into squares before completely cooled or they'll get too hard.

1 1/2 cups all-purpose flour
1/2 cup firmly packed brown sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 cup butter, softened
1 teaspoon vanilla
2 egg yolks
3 cups mini marshmallows
2/3 cup corn syrup
1/4 cup butter
1 (12 ounce) package peanut butter chips
2 cups crispy rice cereal (Rice Krispies)
2 cups cocktail peanuts

In large bowl, combine the first 8 ingredients-- hold out the marshmallows.
Press the crumb mixture in bottom of ungreased 9x13-inch pan.
Bake in 350 degree oven until light golden brown, 12 to 15 minutes.
Remove from oven and immediately spread marshmallows evenly on top of crust.
Return to oven for 2 minutes or until marshmallows begin to puff.
Remove from oven and cool.
In large saucepan, heat corn syrup, butter, vanilla and peanut butter chips just until chips melt.
Stir mixture to smooth texture.
Remove from heat, stir in the cereal and peanuts.
Spoon warm topping over the marshmallows and spread to cover evenly.
