Apricot Cookies

INGREDIENTS
1 cup butter
1 cup white sugar
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 egg
1 teaspoon vanilla extract
1 cup apricot preserves
1/3 cup confectioners' sugar for decoration


DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Cream the butter and sugar in a medium size mixing bowl. Mix flour, baking powder, salt, egg and vanilla extract into the butter-sugar mixture. Cool dough in the refrigerator for 1 hour.
On a lightly floured surface roll dough out to 1/4 inch thick. Cut the dough into rounds with a round cookie cutter or glass. Using the tip of a teaspoon place a small drop of apricot preserves into the middle of the circle. Brush edges with water and fold the dough over so that the cookie is in the shape of a half moon; seal edges Arrange on ungreased cookie sheets.
Bake for 8 to 12 minutes, or until golden brown. Dust the cookies with powdered sugar while still hot.



Christmas Fruit Cookies

INGREDIENTS
3/4 cup packed brown sugar
1 cup dark corn syrup
1 egg, beaten
1 tablespoon lemon juice
2 teaspoon lemon zest
2 3/4 cups all-purpose flour
1/2 teaspoon baking soda
2 teaspoon ground cinnamon
1 teaspoon ground cloves
1 teaspoon ground nutmeg
3/4 teaspoon ground cardamom
1/2 cup diced mixed candied fruit
1/2 cup chopped walnuts



DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Line a cookie sheet with parchment paper and lightly grease. These cookies are really sticky.
In a large bowl, mix together the corn syrup, brown sugar, egg, lemon juice, and lemon zest, with an electric mixer. Sift together the flour, baking soda, cinnamon, cloves, nutmeg, and cardamom, and stir into the sugar mixture. Add candied fruits and chopped nuts; mix well.
Drop dough by tablespoons onto prepared cookie sheet, about 4 inches apart. Spread dough into a 3 inch circle. Bake in the preheated oven for 12 to 14 minutes, cookies should be browned and firm.



Spice Cookies

INGREDIENTS
1 cup packed brown sugar
2 cups molasses
1/2 cup butter
1/2 cup vegetable oil
3 teaspoons ground ginger
4 cups all-purpose flour
1 1/2 tablespoons baking soda
2 tablespoon ground cinnamon
2 teaspoons ground cloves



DIRECTIONS
Beat the sugar, molasses, butter or margarine, and oil together. Add 2 cups of the flour and the baking soda, cloves, ginger, and cinnamon. Mix in the remaining flour 1/2 cup at a time until the dough is stiff. Flatten into disks and cover with plastic wrap. Refrigerate for at least 1 hour.
Preheat the oven to 350 degrees F (175 degrees C).
On a lightly floured surface roll the dough out to 1/4 inch thick and use cookie cutters to cut into desired shapes. Place cookies on a baking sheet and bake at 350 degrees F (175 degrees C) for 8 minutes.



Christmas Raisin Cookies

INGREDIENTS
3 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
2/3 cup butter, softened
3/4 cup packed brown sugar
3/4 cup white sugar
2 eggs
1/3 cup milk
1 teaspoon vanilla

1 3/4 cups raisins
1 cup packed brown sugar
1 cup water
1 pinch salt
1 teaspoon lemon juice
1 1/2 tablespoons cornstarch
2 tablespoons water
1/2 cup chopped walnuts



DIRECTIONS
To Make The Dough: Sift the flour, baking powder, and salt together; set aside.
Cream the butter with 3/4 cup of the brown sugar and the white sugar. Beat in the eggs, milk and vanilla. Mix at high speed for 2 minutes, then reduce speed and gradually blend in the flour mixture. Cover and refrigerate dough for at least 3 hours.
To Make Raisin Filling: Grind the raisins. In a medium saucepan combine the ground raisins, 1 cup brown sugar, 1 cup water, salt and lemon juice. Bring to a boil, and simmer for 3 minutes.
Combine the cornstarch and 2 tablespoons of the water and mix until smooth. Add to the raisin mixture and continue to simmer until thick. Remove from heat and let cool. Once cool, stir in the chopped nuts.
Preheat Oven to 350 degrees F (175 degrees C). Lightly grease baking sheets.
On a floured surface, roll out the chilled dough to 1/8 inch thick. Cut into 2 3/4 inch rounds. Place rounds on the prepared baking sheet. Place a heaping teaspoon of the raisin filling on the cookie round and top with another round. Crimp the edges closed.
Bake at 350 degrees F (175 degrees C) for 8 minutes. Allow cookies to cool on sheet until just barely warm.

2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets.
3. Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

Sour Cream Sugar Cookies

3 1/4 cups all-purpose flour, sift before measuring
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, room temperature
1 cup granulated sugar
1 egg
1 1/2 teaspoons vanilla
1/2 cup sour cream

PREPARATION:
Into a bowl, sift together the sifted flour, baking soda, and salt. In a mixing bowl, cream butter, sugar, egg, and vanilla with an electric mixer. Beat for 2 minutes. Add sour cream and half of the sifted dry ingredients; beat 1 minute.

Stir in remaining dry ingredients with a wooden spoon. Divide dough in half and roll each portion out on a lightly floured surface to 1/4-inch thick. Cut with floured cookie cutter. Place cookies on greased cookie sheets; bake at 400° for 6 to 8 minutes. Store soft sugar cookies in an airtight container.

Makes about 6 dozen soft sugar cookies.

Peanut Buttercup cookies:

INGREDIENTS
1 3/4 cups all-purpose flour
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup peanut butter
1/2 cup packed brown sugar
1 egg, beaten
1 teaspoon vanilla extract
2 tablespoons milk
40 miniature chocolate covered peanut butter cups, unwrapped



DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C).
Sift together the flour, salt and baking soda; set aside.
Cream together the butter, sugar, peanut butter and brown sugar until fluffy. Beat in the egg, vanilla and milk. Add the flour mixture; mix well.
Shape into 40 balls and place each into an ungreased mini muffin pan.
Bake at 375 degrees for about 8 minutes. Remove from oven and immediately press a mini peanut butter cup into each ball. Cool and carefully remove from pan.

Betty Crocker sugar cookie mix. Add one egg and one melted stick of butter. It's amazing. Decorate it to look Christmas-y if you want, but these are amazing any time of year, and easy.

hash cookies

same cookie recipe, but replace the butter with pot butter. sooo much better, dont forget to add the seeds too, it gives a nutty flavour to it.
