OVEN BEEF STEW

2 pounds beef stew cubes
1 (32 ounce) can tomato juice or V-8 cocktail
3 cloves garlic, crushed
1 onion, sliced
1 stalk celery, sliced
1/4 teaspoon oregano
1 beef bouillon cube (optional)
3 or 4 carrots, sliced
4 or 5 potatoes, cubed
1 tablespoon flour
1 tablespoon sugar (optional)
1 1/2 tsp. salt
1/2 teaspoon black pepper

Preheat oven to 250° F.
In a casserole dish, blend salt and pepper, sugar (optional), oregano, flour and one crushed beef bouillon cube (optional).

Stir in tomato juice, mixing well to combine. Add remaining ingredients.

Cover and bake about four hours.

If using a slow cooker, which also works well for this dish, set your timer for six to eight hours on the medium setting.

Beef stew ain't hard to make at all. All you do is flour the beef and brown it real well. then add some onions and let the beef cook til the beef is tender. Then add some vegetables and cook for 20 more minutes adjusting for seasonings as you go. If you find the stew to be too plain you can add (to taste) any of the following ingredients:
Soy sauce
Woo sauce
Kitchen Bouquet
A-1 steak sauce
hot sauce
liquid smoke
and
barbecue sauce.

Okay here is one version:
Brown beef stew:
two pounds of stew meat(or what I do and it`s alot cheaper is when a bottom round or chuck roast goes on sale, cube it up and freeze it in freezer bags)
2 pounds of carrots
a few stalks of celery
1 onion
a few potatoes
1 or two glass jars of Heinz beef gravy
salt & pepper
Italian seasoning
garlic powder

Season meat with salt and pepper.Add to crock pot.Peel and cut veggies into large chunks.Add to pot.Add the gravy. If it looks like it needs more, add the other jar.Top with some water. All ing. should be covered with liquid.Add about a tsp. of Ital.seasoning and garlic powder.Let simmer covered on low all day.If cooking on stovetop bring to a boil, then cover and reduce to low heat.A stew should cook several hours covered at a low simmer. If you want an Italian version substitute the beef gravy for crushed tomatoes or jarred spaghetti sauce.Add some oregano and sserve with Italian bread to dip in it.Make a ssalad and you have a delicious dinner.Stew also freezes well:)Merry Christmas.

The way my mother taught me to make it is this: brown the meat, add your potatoes and vegetables, then add equal amounts of tinned tomato and cream of mushroom soups. Cook it for a few hours on low heat (or 8 hours on low in a slow cooker). No seasoning required since it's all in the soups.

Beef Stew with Red Wine Gravy

Ingredients
2 pounds boneless beef chuck roast
1/4 cup all-purpose flour
2 teaspoons Italian seasoning
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons olive oil
2 large onions, cut into thin wedges
8 ounces parsnips, quartered lengthwise and halved
8 ounces carrots, quartered lengthwise and halved
8 ounces Jerusalem artichokes (sunchokes), peeled and coarsely chopped
1 cup Cabernet Sauvignon or beef broth
1/2 cup beef broth
1/4 cup tomato paste
Chopped plum tomatoes, golden raisins, and/or red wine vinegar or balsamic vinegar
Crusty bread (optional)

Directions
1. Trim excess fat from beef; cut into 1-inch cubes. In a large self-sealing plastic bag combine flour, Italian seasoning, salt and pepper. Add meat to bag. Seal and toss to coat meat with flour mixture. In a 12-inch skillet, brown meat, 1/2 at a time in hot olive oil (adding more oil if necessary).

2. Meanwhile, in a 4-1/2- to 6-qt. slow cooker place onions, parsnips, carrots and Jerusalem artichokes. Top with browned meat. Combine wine and beef broth; pour atop meat.

3. Cover; cook on low-heat setting for 12 to 14 hours or on high-heat setting for 6 to 7 hours. Stir in tomato paste. Pass tomatoes, raisins, and/or vinegar to sprinkle on each serving. If desired, serve with crusty bread. Makes 6 servings.
