I personally don't like cinnamon in cookies, so I typically omit it from my recipes. And no one ever misses it. DO NOT LISTEN to all those people saying, "It won't be as good without it!" If it was never there to begin with, no one will ever miss it. They will be extremely tasty, I am sure. Just a different kind of tasty. And FYI - If it were up to me, I would omit the raisins, as well!! haha. :)

I never put cinnamon in mine,,I don't like it,,,so they will taste just fine without it. I do put a tsp of vanilla in my cookie dough...no one has ever complained and they seem to diesappear as quick as the chocolate chip... : ) Here's my recipe....btw,,if you have ginger,,you could use that....

OATMEAL COOKIES WITH RAISINS OR DATES

2 c. oatmeal (not instant)
2 1/4 c. flour
3/4 c. brown sugar
1 tsp vanilla
1 c. chopped nuts
1 c. raisins or dates
1 c. butter
1 tsp baking soda
dash of salt

Preheat oven to 375 F degrees.

Boil 10 minutes: brown sugar, water, raisins or dates, butter, nutmeg, dash of salt. Remove from heat and add the bakng soda.

Cool. Add: vanilla, flour, oatmeal, and chopped nuts.

These are better if baked the next day.

Bake on greased cookie sheet 10 to 12 minutes at 375 degrees.

Third time this week this sort of question has come!! Mostly I telling it over the phone!!

No you don't have to put the spices in!!! You don't have to put the flavoring in either!! You don't have to only use vanilla, there are other flavorings available.

You can also use peanut butter instead of the butter, margarine or shortening called for in the recipe.

They'll be pretty bland without any of the spices. If you could replace it with pumpkin pie spice it would be ok but it doesn't sound like you have that

No they won't taste very good without it. You need something to spice it up. If you have pumpkin pie spice or apple pie spice that would work.
