when i make cookie dough i never bake all the cookies all at once or we'll eat them in one day! of course then my hubby will eat it raw anyway.
go ahead and roll the dough in wax paper so you can just slice it off and bake when you want some cookies.

the point of refrigerating the dough is to make the cookies chewier and the dough easier to handle, so i don't think that should make a difference

No, it'll be just fine! Like the refirgerated cookie dough, but WAY WAY cheaper!!!

It should be fine.

If it's a soft dough, like what goes thru a cookie press, you will want to let it reach toom temp before attempting to press cookies. Otherwise, it will work just fine.

No problem unless it is a meringue-based cookie--I wouldn't refrigerate one of those before cooking as it might deflate.
