A quick and easy vegetable pasta goes like this (with a little Mediterranean twist)
After you drop your pasta into the water heat up some olive oil in a saute pan.
Add 1 clove sliced/crushed garlic and saute for 30 seconds.
Then add 1 16 oz can of chopped tomatoes and about 1/2 c green olives (cut in half or gently crushed).
Add a sprinkle of red pepper flakes and let simmer.
Cook gently over low heat until the pasta is cooked.
Add the pasta directly to the pan and mix together.
Remove from heat and toss in a couple tablespoons of parsley and 1/4 c crumbled feta cheese.
It's quick, easy and adaptable. You can add onions, peppers and even zucchini or green squash too!

Cook your pasta. Get some frozen or fresh vegatables - brocolli, zuch, tomato, onions - any combo. Nuke or steam the broc. Saute onion for a few min in olive oil, then add zuch and then briefly the tomato. Add fresh minced garlic & herbs -like parsely near end & for afew more min. Salt & pepper. Throw in some butter to melt. You could add some white wine. Toss w/ pasta & eat!.

umm good vegies... pepers, mushrooms, onions, garlic are the best, guess you could use like carrots and stuff, cook the pasta and sauce the same way as you normaly would, then take a pan, put a bit of oil in it and cook up all your chopped up vegetables, then add them to the sauce then put it all on ur pasta.

I prefer squash and zucchini with pasta, it taste great. I just steam them for a little bit and mix it in with the pasta. I add garlic powder, salt, pepper, and Italian seasoning. It comes out wonderfully. I also add a little butter/margarine. YUMMY!
