Oregano and garlic and chopped onion. From there, you can add just a few drops of hot sauce or about 1/4 cup of spicey salsa for an added kick. Taste after you add each item so you can tell what the changes are. For one jar of sauce, use 2-3 cloves of fresh garlic or about a teaspoon of powdered. Oregano, if it's dried leaves, about 1 teaspoon, if ground use about 1/4 teaspoon. You can add chopped celery, chopped green pepper, just a few carrots, some squash, whatever you like, even a small amount of broccoli OR spinach, not both. Play with it and make it your own.

I mince onions, garlic and red bell pepper and sautee it really quickly with salt and pepper in olive oil or canola. Then I add the sauce and let this simmer for a few minutes. Stirring to make sure all the bits are stirred up in the pan. If you do this in a pan not a pot, it will condense in flavor quickly. Sometimes I have to add a little sugar, teaspoon or less. Just taste and adjust.

I use basil, oregano and celery seed in mine and of course a lot of garlic. It gives me the Italian flavor I like anyway.
