Look at higher end brands like benchmade or Spyderco. These guys make great knives that if treated properly can last a lifetime. I'm a big fan of the benchmade nimravous line.If you want to spend more there are many good custom knife makers out there. Chris Reeeves makes some amazing custom knives for reasonable prices, I'd highly suggest you look through his inventory. Arizona Custom Knives also has a good inventory that's worth looking through.

That's way too much to spend on a really good knife. I am partial to German made Puma knives with sambar stag handles. Depending on the size you want you can go from the big White Hunter to something like the smaller Hunter's Pal. I like these very much as they have drop-point blades.
Watch out for the very newest models, some are made in Spain and some have shortcuts in the manufacture. As long as you have plenty of money you can find older ones in new condition on eBay. They have become collector items. If you want a working knife there is nothing wrong with a clean used one.
Many of the White Hunter model were carried in Viet Nam but it's larger and quite heavy.

For the highest quality custom knives, take a look at http://www.knifeart.com/
Most of their stuff is presentation grade, and not designed to be used heavily, but from here you could see who makes knives that would suit your needs and have them custom make you a one-of-a-kind custom blade. Having it coated in Titanium Nitride would further enhance the reliability and durability of your blade, but isn't common practice, as it's expensive. If you're planning to spend that kind of money on a custom knife, though, I'm sure it'd be worth it.
