The recipe calls for 3 cups of half and half and reading reviews, other people used 1-1/2 cups half and half and 1-1/2 cups coconut milk and said it turned out better. I couldn't locate coconut milk and found cream of coconut in the liquor department at the grocery store. Could the half and half be "replaced" with cream of coconut, or should I use 1/2 cream of coconut and 1/2 half and half?

cream of coconut will separate and wont hold up........ i would just use half and half!!!! it is very hard to blend cream of coconut...... you could put ot in the blender but again, it does separate!!! i wouldnt chance it...

You cannot replace milk or cream with booze and if you bought this in the liquor section, it must be liquor. Just use milk and add some coconut extract if you want a stronger coconut taste, otherwise just be happy with adding shredded coconut to your cream filling.

I worked as a master baker for many years and we would never substitute dairy for anything because they would often break down and the flavor wouldn't be as rich. In addition the added sugar in the product would make the dessert overly sweet. See the link below for more info on coconut products.
