EXTRA VIRGIN OLIVE OIL IS FOR FOODS ALREADY COOKED AND SALADS.... YOU DO NOT COOK WITH EXTRA VIRGIN OLIVE OIL..... FOR LIGHT COOKING YOU CAN USE OLIVE OIL BUT ONLY OVER A LOW HEAT AND NOT FOR A REALLY LONG TIME.... IF IT IS FOR FRYING OR SAUTEING, USE A CANOLA OR VEGETABLE OIL.....

Extra virgin olive oil is the best for salads and pasta. It has a low smoke point (295 F) and will burn if you try to fry with it. It is also extracted using the "cold press" method, which is natural.

The other types of olive oil are processed using chemicals to extract the oil. Pommace is the best of this type for frying. The smoke point is 420 F.

The difference is in the filtering process, extra virgin being filtered the least, regular olive oil filtered more and lite is filtered the most. The more the filtering of olive oil the lesser the taste. extra virgin is mostly used for cooking because of its taste. keep in mind that olive has a very low burn point, lower than that of other oils and slightly over that of butter, so anything that burns will stink. regular olive oil is in my opinion the great mediator of the three. Lite olive oil is best for less savory dishes like fruit salads where a very healthy oil is needed with a very subtle taste. please learn more about olive oils and how to incorporate them, its the healthiest choice and it actually enhances the flavor of what ever your cooking. Extra virgin is best for pasta.

If you are going to eat the Olive Oil raw... A salad dressing or something like that you should use Extra Virgin, it's the first pressing and has the best flavor. For cooking, it's fine to use Virgin or even just Olive Oil.

Hope this helps.

Extra Virgin is the most expensive so you'll want to use it sparingly.

For frying, you should use the extra light olive oil. It can withstand higher temperatures. Extra Virgin is better for flavoring like on salads and topping off dishes with. Extra light doesn't have the olive taste at all, though (something I actually like.)

Olive oil really doesn't do well for frying. It burns too quickly.
The best olive oil is extra virgin - the greener, the better.

For frying, use a vegetable oil like canola or corn oil.

extra virgin for pasta and salads. for frying, i prefer vegetable oil, or regular olive oil for italian/mediterranean dishes.
