Sugar is what makes a cake moist more than any other ingredient. Spenda will not affect the taste. It will make for a drier cake or a cake that should you not consume it will dry faster.

Because Splenda's texture is a little finer than regular sugar, I'd say your cake will be a little finer in it's texture but not much.

no i have a diebetic family and we use splenda white sugar and splenda brown sugar it does not change the food at all but there are some people who sware they can taste it...
