Driving is fine in ireland except for dublin, craziness. But there are tons of buses so no need for a car.
But there is plenty of time to travle by car to many wonderful destinations. For night life go to Dublin. Waterford and Cork are beautiful places to visit.
Have a wonderful time and congrats!

You're in the area of Newgrange, so you should visit that if you can. Also the National Stud/Japanese Gardens. You could head into the midlands and slightly up north for a day too, you're only a couple of hours from Belfast on the good roads. South of Dublin city is Wicklow and Powerscourt, and you could go a little further and you'll get to the lovely city of Kilkenny, and the not quite as lovely city of Waterford, but then maybe I'm biased. Kilkenny is about 2 and a half hours from Meath, Waterford maybe 3 and a half.

Make sure that you visit Newgrange. This is a 3000+ year old building in county Meath near Slane and Drogheda. It's one of the oldest freestanding buildings in the World and the roof is still 100% water-proof. The methods used to build it and the time it took are explained in the Tourist Centre beside Newgrange. It is cool.

What country are you coming from? This is important as we drive on the left side of the road and our cars have the steering wheel on the right side. Traffic in built up areas is crazy so keep to the countryside if you want to get any sightseeing done. www.discoverireland.com will give you an idea of places to visit. Enjoy your honeymoon in Ireland, its a beautiful country but one week in January will not do it justice.

Bunratty Castle and Folk Village is fantastic

You should try and get to see this as it is informative about the Irish Heritage and the medieval banquets are an unforgettable experience! Only problem is, it will probably take you about 4 hours to get there so you may want to treat yourselves to an overnight stay in a hotel or guesthouse nearby.
