Basic single phase AC will begin building a voltage a sine wave from 0 volts to it's maximum voltage and then decrease to 0 volts before generating a maximum voltage in the opposite direction. This cycle is repeated many times per second, called it's frequency, 50 HZ in Europe and adjacent land masses, 60 HZ in North America. This describes a single phase system.
A 3 phase system will generate 3 maximum voltage peaks during each cycle, each peak is 60 degrees out of phase with the adjacent peaks. Hence the voltage and current applied to any device is at a higher average throughout the time sequence.
Another system that is seldom used anymore is a 2 phase 5 wire system. Here the phases are 90 degrees out of sync.
In a more modern application of power systems, a solid state controller is used to simulate 3 phase electricity, by generating a pulsed DC to the device.
The easiest way for to conceptualize single phase and 3 phase is with a graph of a sine wave, then superimposing another sine 60 degrees ahead of the first and a third 60 degrees behind the first. This should allow you to see why the power is higher in 3 phase as opposed to single phase.

In construction, 3 phase has 3 sets of 120 volts each minimum voltage. Compared to the average house which is 2 phase - it has 2 sets of 120 volts each, so you can get a maximum of 240 volts for house current for electric water heaters, electric clothes dryer, baseboard heat, etc. The electric service will have one lead for each 120 volt line, ie three feed lines with 120 volts each for 3-phase power, 2 feed lines for 2-phase power, plus one neutral line, and one ground/neutral line tie.
