Our local Mexican restaurant makes a Veggie Chimichanga that has the black beans in it and the rice and refried beans on the side. They place a dollop of guacamole and a dollop of sour cream over the top of the Chimichanga - very good. If you don't eat "fried" things, then you can always spray the tortilla with cooking spray and bake in 400º oven until golden.

If you don't care whether it's a Veggie one or not - you can also add shredded chicken to it.

Do a lime grilled chicken breast. Marinate in lime juice, seasoning, and even some good tequila. Then grill it up. Make some fresh pico to put on top of the beans and rice. Then slice some avocado and get some Monterrey jack cheese and put the sliced avocado on top of the chk breast and then melt a little cheese over that. Delicious! Have some blue corn chips with the left over pico. Pico is onion,tomato,cilantro,jalapeno,salt

Well, there are to usual stand by - Corn Bread

But if you want something to enhance the black beans and rice, I would go with

Blackened Shrimp, or some sort of fish. Or if you are not a fish person, use chicken.
Serve with a side of warm flour tortillas, and you have some good Fajita fixins.

Cut a pork butt (boston shoulder) into bite size chunks, roll in Goya Adobo seasoning, and then deep-fry or pan-fry at 350 degrees for 4-5 minutes until golden brown.

I have a few good ideas for you:

Stuffed Green Peppers:
I love this dish and would eat it every day if I could :) This recipe I found, but you can alter it any way you like. I don't use Swiss, I like Parmesean cheese, but to each his own!

1 cup uncooked white rice
1 can black beans, drained and rinsed
1 tablespoon chili powder
4 green bell peppers
16 slices Swiss cheese
1 can tomato sauce

Preheat oven to 400 degrees -In a saucepan bring 2 cups water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
Combine cooked rice with black beans and chili powder. Cut the tops off of the peppers and remove the ribs and seeds. Spoon about 2 tablespoons of the rice and bean mixture into the bottoms of the peppers. Lay a slice of cheese on top and repeat 3 more times, ending with cheese on top.
Bake in preheated oven until peppers soften, about 45 minutes.
Meanwhile, heat tomato sauce in a small saucepan over low to medium heat. Slice peppers in half, top with tomato sauce and serve.

OR you can make a Rice dish, adding fresh veggies and chicken or shrimp. Here's one Rice salad:

1/2 cup pearl barley
1/2 cup long-grain white rice
1 cup canned black beans, drained
1 cup canned kidney beans, drained
1 cup whole corn kernels, cooked
1/2 cup chopped green onions
1 red bell pepper, chopped
1/4 cup chopped fresh cilantro
8 leaves lettuce
1/4 cup red wine vinegar
1 clove garlic, minced
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon ground black pepper
1/2 cup olive oil

In a large saucepan bring 2 cups of water to a boil. Stir in barley and reduce heat to medium-low, cover and simmer for 40 to 45 minutes or until tender. Let cool.
In a saucepan bring 1 1/2 cups water to a boil add the rice. Reduce heat to low and simmer, covered for about 20 minutes or until tender. Let cool.
In a large bowl, combine the cooled barley, rice, black beans, kidney beans, corn, onions, red bell pepper and cilantro. Mix well.
To make dressing: In a small bowl, whisk together vinegar, garlic, chili powder, salt, red pepper flakes and black pepper. Whisk in oil and pour over salad and toss well. Transfer to a lettuce-lined bowl to serve.

A beautifully baked fish with fried plantain! That would be so good. Or a garlic/spicy shrimp dish!
