I'm cooking the roast for 6 hours in a crock pot. When can I add my baby carrots so they will be tender but not over cooked.

Add them when you put the meat in the crockpot.
Place the carrots on the bottom, meat on top.You could also add some potatoes at the same time.
The veggies won't get mushy.

Most people add the carrots right up front. In a crock pot, most veggies don't get mushy. In a regular pot, I add them the last 30 minutes.

In the crock pot I put everything in at the same time. I always put the meat at the bottom and potatoes on the side with the carrots on top. Never mushy or overcooked.

I add my carrots in the beginning because my family likes carrots very tender. I've heard that you can add them about an hour before serving time, but that's never long enough for me.

I'd add the carrots with the meat! Crockpots cook so slow that the carrots wouldn't cook

I would add them when you start cooking the roast. 6 hours shouldn't over cook them.
