I am on a green pepper and onion with chicken kick lately, but we live so far out in the country that if I buy enough to last a week or so it goes bad before I can eat it. It's a long way back to the store. Wish I could find a farmers market out here.

Just had a brain fart...onions will last longer then a week, duh, lol. But those green peppers go bad quickly!

Should I chop them up before freezing them?

Chop up the bell pepper and the onion and put in a zip lock bag and then into another zip lock bag. Freeze. You can also do that with celery if you are going on vacation and you still have some that will go bad before you get back. You can also do it with carrots.

I use them only in soups because the freezing process makes them soft - no longer crisp.

I live out in the sticks too - about 20 miles from the nearest town. No farmers market here either.

Onions do last a long time but you can freeze them.I dice them and place in freezer bags.
Peppers freeze beautifully.I do some every fall.
I dice mine but you can also freeze them in strips if you wish.
Just wash and core them,drain them,chop and place into freezer bags.

Use a paper towel to absorb the moisture of the peppers and then freeze it in a zip lock bag with air out

Yes, just chop them up the way you like them and then make sure and use a good freezer bag. They sell frozen chopped onion and peppers in the frozen foods area so I don't see why you can't do this as well with your fresh produce.
