Boiled and baked ham

Serves 8-10



Preparation time overnight

Cooking time over 2 hours






Ingredients
5½ -7¼kg/12-16lb ham, soaked in cold water for 24 hours, changing the water occasionally
2 onions, quartered
few cloves
few black peppercorns
1 bay leaf
4 tbsp English mustard
225g/8oz demerara sugar, depending on size of ham
300ml/½pint chicken stock (to make a gravy)



Method
1. Place the soaked ham in a large pan, with the onions, cloves, peppercorns and bay leaf.
2. Cover with water, bring to the boil and skim away any impurities.
3. Leave the ham to simmer, allowing 20 minutes per 450g(1lb).
4. Pre-heat the oven to 190C/375F/Gas 5.
5. Once cooked, remove the ham from the pan and stand for 10-15 minutes before peeling away the skin.
6. The fat can be left as it is or scored, creating a diamond pattern.
7. Brush the ham with mustard and sprinkle well with the demerara sugar.
8. Bake the ham for 30-40 minutes taking care to baste the ham with juices and the caramelised sugar.
9. Once golden, remove from the oven and rest for 15-30 minutes before carving, or leave until cold.
10. To make gravy, pour the chicken stock into the roasting pan to lift any residue in the pan and simmer until reduced by one-third to one-half and strain.

I would put the ham (plain) in the oven at 300º degrees (or even 275º but that's a little low for me) and cook it for 3 hours - covered. After the 3rd hour, mix together the honey and mustard and slather it on the ham. Poke cloves into the ham if you have them. Cook for 1 hour longer or until the ham is warmed all the way through.

By cooking on a very low temperature, you will be able to heat it all up and not dry it out. This is how the buffet places heat their hams. I found their hams always nice and moist if they did it this way.

Enjoy! You can also hang pineapple rings on those cloves if you want a more complex flavor - that is along with your honey-mustard. You can even try different kinds of mustard.

Mix the honey & mustard together. I usually use 3 parts honey to 1 part mustard, because I like it kind of sweet, do it according to your tastes. Brush some on the ham. Cook for however long the wrapper says. Baste the ham with additional honey/mustard glaze every 20-30 minutes as it cooks.

Boil the ham til it's cooked (save the stock for delicious soups) and leave to cool.
Score the fat on the ham, and press some cloves into it.
Mix up a glaze using the honey and mustard, and some spices too, just to give it some depth. It's best to check the taste of your mixture before you apply it to the meat, so make a small batch to test first.
Then just glaze the ham all over, making sure it's covered properly and roast it (not sure on times, only technique). Just check on it til it's done. This is pretty much my mother's technique, and I've never tasted a bad ham from her.

Ham with Honey Mustard Glaze

A touch of honey and mustard dress this ham for any occasion.

1 (5 to 6-pound) fully-cooked ham
1 cup firmly packed brown sugar
1/2 cup honey
2 tablespoons prepared mustard
1. Preheat oven to 325°F.
2. Bake ham according to package directions or for approximately 20 minutes a pound.
3. Meanwhile, whisk together brown sugar, honey and mustard. Thirty minutes before ham is done, remove from oven. Carefully pour drippings from pan, if needed. Score surface in a diamond pattern and brush with glaze. Return to oven until ham reaches an internal temperature of 140°F.

Makes 10 servings.

*Note: Directions are for a bone-in, fully cooked ham. Also called “ready-to-eat’” or “heat-and-serve” ham. A “cook-before-eating” ham must be cooked to an internal temperature of 160°F, approximately 18 to 20 minutes per pound.

Instead of honey and mustard try cooking it with 'honey mustard' its real good. Just cook the ham and when the ham is cooled down, spread the honey mustard on the ham.

I agree with Aaron K only before you put the ham in the oven cut some crisscross lines in the top to let the honey and mustard soak in better.

PAULA DEEN's HONEY MUSTARD GLAZE

Honey Mustard

Ingredients:
3/4 cup mayonnaise
3 tablespoon honey
2 tablespoon yellow mustard
1 tablespoon lemon juice or juice from 1/2 lemon
1 dash paprika
Horseradish to taste
2 tablespoon orange juice (more or less as needed)

Directions:

Combine all ingredients except orange juice; stir well. Thin to pouring consistency for glazing, dressing or dipping consistency for dips with orange juice. Cover and chill for 2 or 3 hours.

Don't know about honey mustard but Paula Dean did a Christmas special yesterday where she covered a ham in crescent roll dough. It looked yummy!

try this boil the ham for an hour, mix together 2oz melted butter, 3 tablespoons of dark brown sugar, a teaspoon of Worcester sauce and two of dry mustard add a glug or two of dry cider, drain the ham well, remove skin and score the fat put cloves in scored fat, then bast the ham with the mixture, and roast for 40 Min's gas 5, basting regularly. party time! amounts can be varied to taste. and size of ham
