Jesus died for all of the sins (from the first to the last one) of all the humanity (all the men, women (Eve included), of all ages) of all times (including those who lived before Jesus (like Eve), those who lived on the same years when Jesus was walking on Earth, and all who lived (and live right now) after Jesus died and resurrected.
If Eve ate two of the forbidden fruits (which some artists wrongly painted as apples during Middle Ages or Renacentist times) that would be just Eve's sins #1 and #2 which are already included in Jesus' "ordeal".

It would depend on the story writer I suppose. For instance, the bible talks about Eve eating a forbidden fruit, but does not specify which, yet some people somehow know for sure that it wasn't an apple; their personal stories are different. Were it a friend having to die, I'd have my friend choose to redeem her of the second mango-tangerine hybrid and thus get salvation for the first.
Were it me, I'd be smart enough to just allow her to eat the darn seedless pinapple-watermelon and every other fruit she desired. Or, I'd be smart enough to not put the fruit in front of her in the first place if I didn't want her to eat it.

if eve ate two apples, she'd have know better than to give adam any, and we'd still have a matriarchal society.

Anyways, she would have sinned another way, as would adam. Jesus died for ALL sins, not just one.
