They'll be a little "fluffy"...no big deal...they'll still taste fine.

Not knowing your recipe makes it difficult to give a definitive answer. In general, if there are no acidic ingredients such as buttermilk or lemon juice there will be little textural difference (My recipe for sugar cookies uses lemon juice). If the recipe uses milk you might notice a "softer" taste because regular milk is slightly acidic, pH about 6.6, but it is not acidic enough to have much leavening effect w/ the baking soda.

They'll be a tad salty and they might rise a LOT. I'd do one test cookie, then double the recipe if it blows up like a souffle. That'll keep you from throwing away what you've already mixed :(

Should be just fine. The texture might be a little off, but not too bad.
